Hi, this is Topic 1 Preparation prior to bread making
There are 4 sessions to get through starting with Calculate total dough weight. Watch example on how to use the calculator on your PDA. Follow the example on basic mathematical calculations to complete your tasks.

Activity

From the production sheet determine how many of each product is to be produced and their scale weights.

For example how many 800g pieces, 550 pieces, 400g pieces, cuts of rolls, pizza, foccacia, logs, scrolls and all other products for that dough.

Multiply the scale weight by the number of products to get the total weight for each product.

Add the total weights for each dough type to get a total dough weight (TDW).

For example: Show production sheet with order for 90 x 80g rolls
Add calculator (Leigh) 90 x .080g = 7.200
Total Dough weight is 7.200
