This is a record of our development as teachers using technology such as blogs, pod Casting, Wiki, flikr, flash and a PDA as a tool for teachers.
We plan to place the fist topic Preparation prior to baking on this blog for testing and feed back.
Janet and I have now finished the delivery draft and have broken the content of Semester 1 bakers delight bread making course into 7 topics.
Within each topic there are a number of sessions to get through, we decided to call these sessions rather than lessons as they were not stuctured like a traditional learning.
Janet is now working on the delivery and assessment matrix and I have been working on the development of resources. This has been challenging as we still do not have the PDAs, I have never used one before as with many of the technologies we plan to use .
On saying that this is my motivation for this project, to learn more about using technology to deliver education and communicate with students, in the words of Leigh Blackall "infotainment". The chance to work with Leigh again is a big motivator for us, we learnt so much during blended chocolate and are looking forward to him coming to Hamilton on the 23rd.
Topics are:
Preparation prior to baking
Identify ingredients
Produce bread dough
Product and process faults
Bake bread
We have used all Bakers Delight resources to emulate their work practices and by mapping the learning outcomes to their products and processes. We have I believe customized the learning to supported their workplace and also made the apprentices learning more work related.
Apart from a introduction at TAFE in using the technology and a two day work shop on bread faults all learning will be delivered flexibly.

The calculations package Topic 1 that Leigh is developing for this project can also be viewed http://eresources.tafensw.edu.au/ (resource number 558 use basic mathematical concepts). We are hoping Leigh will be able to build an interactive flash calculator that can give students examples of dough calculations via a PDA and can be also be printed as a hard copy for module notes.

Love your blog already Dean. Looks great. Style. The photo is style. Think of a student, coming across this blog. Next day at school, their teacher shows this same blog and for homework the kids are listening to your podcasts. Next year, those kids are studying with you... then what? ;) They're off to Dunedin for some special training with Thanasi?
Can you publish your delivery plan? Perhaps copy paste the text into a wiki for us to help you with it... http://wikispaces.com is good to use for this.
Hi Liegh, I tried and tried to copy and paste the session 1 delivery plan but it displaces the text. I have it in a table but it will not allow me cut and paste even within a table in the wiki edit. Can you help. I tried to contact Jock brady for help on the recorder but have a two choices.

hey mate. wikispaces does let you do very simple tables and i've tweaked it a bit, but generally speaking, tables are a nightmare as far as share-able, reusable resources go. see how difficult it is for us to get the word table into something as common as a wiki?
on the plus side, we are both working on the one document now, without having to email versions to each other. the restrictions on layout can be a blessing.
also, wikispaces displays quite well on a pda :)

Tables is where Im at! That’s why you are needed for this project, thinking outside the square (table). I can see the point of the wiki as far as all of us being able to look, comment, add and also for you to be able to develop resources from this. I have spent some time playing with it but you are right I need you to show me the potential of this.

I have added anouther session to the wiki but the tables moved the info around again, so I will wait for your assistance. Have added the calculations package link to the blog. I will email delivery plan for topic 1, thats our start.
Have ordered a IC recorder/memory stick for the Friday. I have an idustry bread expert comming in so we can record a disscussion on bread faults. Camera is ordered for filming bread faults/ yeast tests.
